Hi dorry,
I love roast pork and would freeze it to use another time.
If you need to use it now you could roast it and cut into thick slices and serve it with whatever you normally serve with pork chops. Failing that you could chop it up raw and use it in things like sweet and sour pork, casserole etc. Or what about roasting it as normal and using it up as leftovers.

Lamb is often not too appealing cold, but a roast pork joint would see you through a few meals - either cold or recycled into another dish.Warning ..... I'm a peri-menopausal axe-wielding maniac0

You could make a goulash.
Chop up the raw pork into large cubes. Toss in seasoned flour and fry small batches until browned. Add a chopped onion and 2 cloves of garlic to the pan used to fry the pork and cook until the onions are soft. Add 2 tsp paprika, 1 tsp caraway seeds, 1 tin chopped tomatoes, good glug of wine (white or red).
Brilliant in a slow cooker or cook over a very low heat on the stove for a couple of hours or 2 hours at 150 degrees in the oven.
Serve with sour cream or yogurt. Goes with rice or mashed potatoes. Lovely with a baked potato too (especially if using sour cream).0 -
