Trying to plan, with out a plan

Hi all
Had a little sleepless night (due to kids, not stress/covid-19), so excuse the ramble.
We have a 3 bed detached house in scotland, and two young kids. Wife had a fabulous job for a supermarket chain, me not so good job. So, we remortgaged 3yrs ago, to hopefully try and pay the mortgage off sooner, and probably overstretched ourselves to do this. 2yrs ago wife was made redundant, went back to college, and now earns 1/3 of what she currently earns on a temp contract.
We have 2 years left on the current deal. With my maths, when this runs out we will have approx £47k left to pay. However, as my wife's employment is temp (I believe) the mortgage company wont take this in to consideration for remortgaging.
Checking my eligibility, and just on my earnings, they would lend £40k - so we need to find £7k from somewhere.
I'm thinking sidehustles while I work - I am a key worker.
Any other suggestions?

Another company may consider your wife's income if she can show a record of it so it might be worth considering consulting a mortgage broker.
