buying from partners Ex.

Hi there.
Currently myself and partner live in a 4 bedrooms house, which has no mortgage other than a deed store attached, however it is in my partner and her ex's name. we've been battling through form E for over a year now. and eventually settled on a figure to buy him out of 75000. My partner is a part time optometrist. however she has now lost all her extra shifts, against which the bank had agreed to lend 75000 in her name only. They have now said they will only lend 30000, due to the virus closing all routine eye tests. Unfortunately due to his pettiness, hence why we've been paying solicitors for over a year, he will only agree to sell to her. I could easily raise a mortgage as i earn nearly 47000 permy salary, and have been in employment for 12 years. so stable and easy.
Could I raise a mortgage but agree to only have my partners name on the deeds, and register an interest? or what if any would our options be.

Mortgage can be in both your names. Deeds on one name. Be guided by your solicitor.1
