How do you dry mushrooms?

    It's sometimes possible to get really cheap bulk deals on mushrooms from market stalls at the end of the day and I'm wondering if anybody has a tried and testing recipe for drying them?

  • I tried drying some St Georges mushrooms back in the spring, I filled a tray bake tray with slices, there looked like loads...I dried them in the fan oven on low setting, and popped them out in the sun a few times, did that til they were dry [a few days] but...there was hardly enough of them left to cover the bottom of a jam jar! They shrank really really small :(

    When I dry Ceps I just cut them into slices, pop onto a baking tray and leave perched on a radiator for a day or two. I usually have a radiator on by the time mushrooms are in season. Mind you, I only found three this year...

    I love St Delia's mushroom risotto too, although this week I did it stove top rather than oven. I buy mega jars of dried mushrooms from Costco. I did get some on a French Farmers market at Antibes once, but they were too expensive to try that one again!.
