It's sometimes possible to get really cheap bulk deals on mushrooms from market stalls at the end of the day and I'm wondering if anybody has a tried and testing recipe for drying them?0

I tried drying some St Georges mushrooms back in the spring, I filled a tray bake tray with slices, there looked like loads...I dried them in the fan oven on low setting, and popped them out in the sun a few times, did that til they were dry [a few days] but...there was hardly enough of them left to cover the bottom of a jam jar! When I dry Ceps I just cut them into slices, pop onto a baking tray and leave perched on a radiator for a day or two. I usually have a radiator on by the time mushrooms are in season. Mind you, I only found three this year...:wall:0

I love St Delia's mushroom risotto too, although this week I did it stove top rather than oven. I buy mega jars of dried mushrooms from Costco. I did get some on a French Farmers market at Antibes once, but they were too expensive to try that one again!.[SIZE=-1]"Knowledge is knowing that a tomato is a fruit.
