Rhubarb recipes?

I found it hard to search for recipes, although I found loads of references to winning rhubarb gin!

I’ve got loads of forced rhubarb from the allotment, any recipes other than crumble please?

Sorry I hadn't got a recipe but rhubarb fool is a easy dessert, I tend to use half custard and half cream rather than all cream.

If you have strawberries they work well with rhubarb.  I love stewed rhubarb and strawberries (you only need a few Strawberries) cooked with orange juice and the zest then chilled and eaten over Greek yogurt for breakfast

This is where my Lemony Chicken marches in to save the day. I've no idea where it came from but I came up with it around 30 odd years ago when I had some lemons & chicken breast going spare. It might have Tuscan, maybe French origins but either way it's contained neither lemons nor chicken in recent years. In terms of the lemonyness I've moved towards herbs like tarragon, bergamot and/or sorrel. I think a little rhubarb might help add that astringent element in place of those herbs (or lemons or limes).
So: Using chicken or pork as your base make up a coating in a bowl of plain flour, a little dijon, maybe some herbs finely chopped, sorrel (or rhubarb minced, wild garlic works well too, it'll be in season soon) add olive oil, a little white wine & a little cornflour to taste & consistency. Mix well & coat the meat. Start a pan with chopped leek, shallot or whatever then chuck in the meat/coating mixture. Keep moving the mixture to stop it turning into a large lump or the flour burning. Add things like baby courgette and serve with tags or tripoline pasta. Beware. This is very much a make it up as you go recipe

Not a recipe, but posting to say that Aldi's rhubarb and custard HCBs are a pleasant surprise.

  • Hi,
try a rhubarb chutney, and if you want to give it a kick, add some chilli.

I've put all sorts of fruits with chicken (grapes, pineapple, orange, lemon, cranberries and apple and I don't mean just a squeeze of juice) and although I've not used rhubarb (yet) I expect that will go well with it as well. I would just microwave it and spoon it onto the plate, or maybe microwave it and stir it into a mush, like I do a Bramley, for apple sauce. I expect it will freeze in that state as well. The apple does.
Rhubarb and rhubarb and ginger jam are both delicious, but that would mean quite a bit of sugar and I've no idea if sugar is on the stock-pilers' lists or not, as I haven't tried to buy it.

Just thought of something else - add some brown (if possible) sugar and/or a bit of black treacle when cooking the rhubarb, leave it to cool and put it in individual dishes, and grate a generous coating of chocolate on top. Dark chocolate is probably best even if if you prefer milk generally, as I do. How much of each ingredient is really just a matter of personal taste.

Some of ours is ready, chutney sounds good, though I need a good supply of cheese or I'm stuffed
