FTB -what do institutions actually see

Ive read lots of things on here and im so confused.

When you apply for a mortgage they do a credit check but what exactly do they see?  Do they see your score? Your credit history? Your current accounts, limits and balances?

What other things are taking into consideration?
Sorry i am new to this  whole thing and mortgage will be just me.

Any cash advances made on credit cards will be seen, credit limits, credit utilisation etc

Does that include overdrafts? I was definitely in my overdraft at the beginning of the year (arranged) I've since come out of it by a comfortable few thousands but obviously they're looking at the whole picture. If they ask to go back beyond Jan 2020, too (when I was in my previous, lower-paying job) they will see I was in my arranged overdraft back then pretty much consistently.

Is that bad? Does 2 out of the 3 months worth bank statements showing no overdraft usage counteract that?

With my credit card, I use it and pay off the balance in full monthly, never been late, never had interest. My broker said that is okay?

    Your credit history,
    late / missed payments,
defaults / CCJs / bankruptcy etc,
    accounts held,

They do not see the score, that's something the CRAs make up for people to stress over.
Question: if they don't see the score, why is it that literally everywhere talks about having a good 'score' in order to get the best rate, etc? Are they only able to go back 6 years or do they go back your entire history of credit?
I'm currently going through the process of my application and I'm terrified if they base it on score, It'll be a straight no.
