Current Halifax customer yet struggling to get a new one.

Hi there, I have recently purchased a new home with my husband. We are current Halifax mortgage customers and when we had our offer accepted we contacted them and spoke through the options regarding porting our current deal (we just remortgaged in 2018 and were on a 5 year fixed rate) or taking a new deal altogether. We chose the latter option. We started this process 6 weeks ago and submitted all the relevant paper work and payslips etc. However every week Halifax come back to us with a new issue. They had issues with my payslips as I work for a local authority school and get school holidays so they questioned why I have holiday pay in every payslips. After three weeks they finally accepted a written reference from my employer confirming my salary.
My husband works for a company called Kier which is subcontracted to virgin media and he does installations. He is paid an hourly rate but on top of this gets a “production bonus” or piece work as it is sometimes known. This is extra income based on the types of jobs he does each day, some view this as unreliable however he is paid this every single day he works unless he was to do no jobs which is never, he wouldn’t have a job if there were no jobs to do. This is where the issues seem to come about. They first requested extra payslips so they could work out an average on his production bonus which we provided but then said they needed a reference from his employer. They have provided this but are now saying as it only details his hourly rate and contracted hours they need more, they are wanting a detailed letter of his bonus. However this is impossible to provide as it changes daily depending on the jobs he does. His employers have already said that they will not provide this as the letter they already gave is their standard mortgage reference letter and any other information can be found on his payslips or contact.
I find it strange Halifax are having such issues with his payslips seeing as he has been in this job since we have had a mortgage and they seen these exact payslips when we remortgaged in late 2018. We are now just 6 weeks away from exchanging on our new house and beginning to stress. I am looking for some advice on what to do, should I withdraw my application from the Halifax and go to mortgage broker? Or persevere and hope these kinks are worked out? How last minute have other people waited to secure a mortgage deal before moving? I don’t want to risk a black mark against our name being rejected from this application when both of our salaries are more than enough for the loan we require.
