i recently found a recipe, in a newspaper or magazine for a baileys type drink, made with cream, brandy and dulce de leche. But I've lost it! I would be extremely grateful if anyone has it and can please let me have it.

If you can't find the above one, try this one.ISLE OF ISLAY CREAM
"Winemaker" Magazine, p.129, March 1982
INGREDIENTS
14 fl. oz. (400 g) tin of condensed milk
8 fl. oz. of Scotch whisky
7 fl. oz. (250 ml) carton of UHT long-life single cream
6 fl. oz. (170 g) tin of evaporated milk (eg. "Ideal")
6 - 8 teaspoons of coffee essence (eg. "Camp")
(None of the amounts are critical, and the sizes of the tins and cartons have changed and/or been metricated since the recipe was originally published.)
METHOD
Pour all the ingredients into a 2 pint (1 litre) jug or bowl. Use the whisky to wash out all of the thicker ingredients from their containers. Mix. Pour. Drink.
(I don't know how long this will keep for: it has never stayed around long enough to go off!)The acquisition of wealth is no longer the driving force in my life.

The OP reckons it will save for up to 2 months in the fridge but like Steven says, it doesn't stay around long enough for you to find out.:rotfl:0 -
Yet another recipe
To make your own special blend of home-made Baileys:
500 ml single cream
1 tin condensed milk
5ml vanilla essence
Whisky to taste
Whisk cream to thicken it up slightly.
Slowly beat in the condensed milk.
Add vanilla & whisky to taste.
Bottle & keep refrigerated !
another variation
1 teacup of whisky
1 and a half tablespoons of Camp coffee essence
1 tin condensed milk
half pint single cream
Mix all ingredients together.
Sieve before bottling.
and yet another one
INGREDIENTS:
450ml whisky
1 400g can evaporated milk
1 400g can condensed milk
1 tsp instant coffee
½ tsp vanilla extract
put everything together in a blender for 1 minute. Bottle and store in the fridge for about a month
And of course if there's any leftover you can make a cheesecake

Thats great thanks I love Baileys. What type of coffee would be best to use though? Any ideascross stitch cafe #90 UFO's 6 to finish in 2013, and loads of new kits to boot
