Remortgaging

Hello
It's my first time remortgaging (Northern Rock customer!) and we've been approved which is great as we can get away from our 5.03% interest rate!
My question is, the questionnaire we've received asks us when we want to complete and the options are 'as soon as possible', 'at the end of the month' or a particular date. We pay our mortgage on the 2nd of the month and interest is charged on the last day of the month. I automatically selected 'as soon as possible' but wanted to check this would be right and we wouldn't be hit with interest after the event. We have no early redemption fees and the only fee we'll have is the discharge fee of £250.
Total novice here - so apologies if this is a daft question! Thanks in advance for your help!
