Put on a lot of lovely pesto, add veg, olives, sundries tomatoes, whatever and bake. Lovely cold and travels well, I often have it in lunch boxes. Just needs a bit of salad and chips/baked potato.
Roast veg salad and falafel. Make up quinoa/cous cous/ bulghar wheat, let it go cold. Roast peppers, onions, courgette etc and stir in along with anything else you fancy.
Can replace the pesto with tomato puree - ends up looking a bit like pizza. can top with vegetarian cheese if you want to.
A more summery tart has the pesto replaced with soft cheese (philadelphia or similar) and sliced tomato/basil.2021 - mission declutter and clean - 0/20210 -

Thank you! I find the freezer is less my friend with veggie meals, something to do with texture. But there's plenty of inspiration. An especial thank you to working mum for the links.
