Sorry for being so inexperienced but I have a piece of rolled up lamb for roasting. Do I take the string off before cooking or cook with the string.
I always cook legs or shoulders.

Leave the string on as it's holding your meat together.
If you take it off, your meat will unravel and cook at different times, leaving you with partly overcooked lamb in parts.

Hi there never apologise for asking its how we all find things out I have been cooking for well over 60 years and I too am still learning and the great thing about thing forum is there is no such thing as a daft question and we are all here to help each other
a few years ago as I am not that techy I found my computer desk top clock was reading all sorts of strange times, and I hadn't a clue what was wrong Before spending a lump of cash to get someone to repair it I asked on the Technical forum and a chap said its probably your battery is expiring He told me where to buy a new one, and how to replace it in the 'tower thingy ' (I told you I am not technical ) cost for the battery was then under three pounds and following his instructions I replaced it and voila it worked and reset itself perfectly
So if I ever get stuck on anything I will always ask on here or one of the other forums and someone is sure to know how to fix things
