Reading back on it all I think (with your fantastic assistance) I have the figures now. I went back on an old WhatsApp message I sent the employee (at the very start of this whole issue) and here are the bones of that message.

Here is the settlement figure.
4 weeks pay as discussed at £360 per week = £1440
5 1/2 days unpaid holiday = £396
That totals £1836. There is no obligation to make any good will payment but I will make the amount up to £2,000 as I am ken to resolve this amicably.

Therefore, I think it’s pretty clear it is as follows:
1.£720 2 weeks notice(taxable through payroll)
2.£395 5.5 days holiday(taxable through payroll)
3 £720 2 weeks redundancy(tax free)
4 £164 Go away quietly money(tax free)
