Using up old veg?

I have veg in the fridge that looks past it's sell by date, it's going brown at the ends, so can anyone give me a soup recipe so I can use this veg up instead of me chucking it out please?

    i cut anything inedible off the veg then chop it up and throw it into a saucepan if you havent quite got enough veg add a spud or two then cover with stock, this can either be hm chicken stock or just covered with enough water and a veg/chicken stock cube or two thrown in. let it simmer away untill veg is cooked then blitz it all with a handblender until smooth or however you like it. when it is blitzed (technical term ;) ) taste it and add any seasoning of your choice till it tastes nice, i add salt/pepper and sometimes chilli powder for a kick. then if you have any cream or creme fraiche mix it in and save a swirl for on top of the serving bowl it doesnt matter if you havent got any though. serve with lots of crusty bread yummmm :p

    take any vegetables you have - last time I made this I used, spinach, carrots, garlic, celery, potato, onion, red pepper, swede, parsnip. throw in food processor, chop into small pieces, decant into saucepan, add water or stock if you have it, simmer until cooked. Season to taste. Lovely!

    If I feel like spending a bit more time, I lightly fry the onion and potatoes first, but it's not crucial.

    I don't have a blender or food processor, would a smoothie maker be ok?

    i would of thought so, but id mash it up first with a potato masher to get rid of big lumps or make sure you cut the veg up finely

    no probs :D when times were hard in the angchris house i used to save my carrot and potato peelings and any leftover veg and freeze in an old ice cream tub till i had enough to make a soup out of it.

    IN that case I would just chop all the veg, cook with the stock or water, then set about it with the potato masher - my Dad does this and it works fine.

    Thats a good idea, I work in a school kitchen and I'm disheartened at all the veg peelings etc that go in the bin, I may just bring it all home now :D

    I've been Money Tipped!
    Made some nice tomato soup the other night,

    2 carrots chopped finely
    1 onion chopped finely
    1/2 pint of stock (veg, chicken etc)
    bay leaf
    1 tablespoon of tomato puree
    2 teaspoons of garlic puree
    1 tin of plum tomatoes and juice
    1/2 teaspoon of sugar
    salt and pepper

    Saute the onions and carrot until soft in some olive oil.
    Add all the other ingredients, bring to the boil and then simmer for half an hour.
    Blend till smooth and serve with crusty bread.

    It's very good and my kids loved it.

    Also used Tesco passata instead of the tinned tomatoes, 29p a box with garlic and herbs in and put some Ditali Rigati in it to bulk it out a bit, cannellini beans etc.

    I make one called "fridge soup" when this happens to me. Chop up all the veg in medium/small pieces. Sling in in a pan (or these days the slow-cooker) with two handfuls of orange lentils, a tin of tomatoes, a good dollop of tomato puree and fairly strong ham stock.

    I like it blended, but you can eat it as is
