Cajun chicken recipe, and what goes with it?

I bought some frozen chicken fillets last night, as I have chosen to do a cajun chicken style meal at Uni. Does anyone have an inexpensive recipe, preferably made from scratch, for the chicken?

And what sort of things would go with it to make up the meal? Personally I'd be quite happy with a variety of steamed veg, but without some sort of dressing that might be considered a little bland when put with the chicken.

    I'm no expert on cooking chicken cajun style even if I am from Louisiana!:o

    However, I would have cut the chicken into strips and dipped them first in egg and then in a breaded batter and in the batter I would simply have put a cajuny spicy poultry spice (I get mine from America but you can use paprika and any other hot looking dried spice you've got) in it as well as cracked pepper and lightly deep fried them.

    Served with it traditionally in my family is baked beans, potato salad, dinner roll (heavily buttered). Maybe a simple side salad. Serve with lager.

    We have Carribbean rice n peas with cajun chicken.

    It's rice cooked with spices, pulses and onion. It's very tasty and much more interesting than the name suggests!

    I use a recipe from a cook book, but if you look on the net, you'll find a recipe you can follow.

  • it's quite nice with corn on the cob / salad/ hm potato wedges and some yoghurt dip to cool off the spices?

    I've seen a low fat style chicken recipe. You get skinless pieces of chicken, dip them in seasoned flour, then egg white and then cajun mix. I've seen the mix made from finely crushed cornflakes and cream crackers (about half and half of each). Its seasoned with see paprika, cayene, garlic powder (real garlic will burn and leave a bitter taste) salt and pepper. Spray it with Fry Light and bake on about 200'C til cooked.

    Serve it with wedges, steamed veg or salad.

    we often have cornbread with cajun chicken, savory rice, wedges and onion rings also go well
