ok so its not that spectacular did my healthy eating course again today.
We made Chicken korma and chipaties (not sure how you spell sorry) all from scratch, well it was delicious i have never made from scratch before jar girl for curries before today that is as i am not going back.
dont know why i was so scared to make myself before as it was so easy and yummy.
It is the last session next Monday so i have signed up for the 2nd course they are doing in January

I'm always delighted when someone discovers the delights of proper home cooking. You know exactly what's in it and you can save even more if you cook a bit more and freeze it for later.
I usually cook from scratch - having said that Pataks cans of curry sauce were BOGOF in Morrisons the other day so at 35p per tin, I couldn't walk past it.
...But I'll add extra veg...!:D promise.

Chappatis:
1 lb wholewheat flour,
2 tsp. oil
warm water
Mix together the oil and the flour add just enough warm water to bind into a pliable dough.
Knead for five minutes or longer
Divide medim sized balls and dusting the hands with flour flatten the ball slightly. Roll out on a floured board to 4"- 5" flat discs.
Heat a dry frying pan, toast the discs on this until the surface shows bubbles. Turn and press down to cook evenly. When brown spots appear they are done.

make 6-8
100g plain flour
100g wholemeal flour
1/4 tsp salt
1 tbs oil
100ml hand hot water ( you may need a little more)
a little oil for frying about 1-2 tbs in total use a little at a time- put flour & salt in bowl, add oil and then slowly add enough water to give soft but not sticky dough
- knead for 3 mins then form in a ball and cover for 20 min
- break off walnut size pieces and roll each ball in to a rough circle approx 15cm ( is to choice) you should have enough for 6-8 chapattis
- heat a little oil in a frying pan over medium heat and cook each chapattis one at a time until golden brown on both sides wrap in foil to stop going crunchy and to keep warm.

2 tbsp veg oil
1 oinion finely chopped
1 garlic clove chopped
2 green cardamoms lightly crushed ( optional)
1/4 -1 teaspoon chilli powder ( to taste)
1/4 tsp turmeric
1/4 tsp ground cumin
1/4 tsp ground coriander
( or instead of the above 4 use a curry powder)
1/4 tsp salt
1 tsp tomato puree
2 skinless chicken breasts cut into bite size pieces
100ml of coconut milk or use dry dissolved in 300ml of warm water but do not add the extra 200ml of water with almonds later on ( this cheaper option)
1-2 large tbsp ground almonds
1cm fresh root ginger peeled and grated
1/2 tsp garam masala- heat oin in deep saucepan add onion and garlic. fry for 5 mins over med heat.
- stir in chili powder,cardamom, turmeric, cumin and coriander and salt fry for 1 min
- add tom puree
- reduce heat and stir in chicken and cook until white all over
- pour in coconut milk
- add ground almonds with 200ml of water if needed ( see above)
- simmer for 7 mins
- add ginger and garam masala simmer until all cooked
