Vegetarian meal idea

Trying to eat less meat and when I do eat meat it will be organic which is very expensive so most meals will be vegetarian.
I'm looking for some inspiration for vegetarian meals that are fairly cheap, quick and easy to make but are filling. Good hearty meals for the winter.

Do you want to cook from scratch, or pre brought?
One of my favourites is stuffing and lentil burgers - really easy to do - but slightly more time consuming than whacking some linda mccartneys under the grill when you come home from work hungry and tired..so i tend to mix and match

I find that the Good Food website is usually the best place to look for any kind of recipe. I do suggest checking the comments below the recipes though, as they tend to have some helpful tips, or are a good indicator of whether the recipe is any good or not. I'd batch cook some veggie chilli and freeze in portions. It's often possible to pick up cans of pulses fairly cheaply (Home Bargains can be good) and as well as the onions and tomatoes you can add in other veg like mushrooms and peppers and carrots. I use a chilli con carne recipe (without the meat of course) as I'm not a vegetarian so happy to use beef stock but you can use vegetable stock.
It's a versatile meal as it's good with rice or over a jacket potato.
And I like egg and chips!:D0 -
Jamie Oliver has just finished a series of Meat Free Meals, he has a book but most of the recipes are online0

As a vegetarian i had found my meal plans had become a bit boring. However, the latest jamie oliver book mentioned above, has revitalised my taste buds. Would definitely recommend it0
