Don't really want to tell them they have to let me work there again, but also don't want to let them get away with it?!
It doesn't sound like they have "got away" with anything. It is perfectly normal in any work place for the work requirements to change from time to time.
Of course, if you aren't happy with what is going on at your work place, you are perfectly entitled to resign and move on. I think your energy is best spent finding another job than getting into a fight with your former employer.0
