Not happy with builders 'standards'

We are in the process of building a single storey garden room extension. We obtained several quotes as recommended and plumped for a local company who state they follow ISO9000 standards, have well-trained employees etc.

So far, they have mucked up the groundwork (which was put right but lost us 4 weeks on our timing), and now we discover that the cavity wall has been bridged by falling mortar (which should have been dealt with properly by the brickie. To make matters worse, they have fitted the Kingspan wall insulation incorrectly (vapour barrier is facing the wrong way). We have checked this with the manufacturer's technical team.

Without knocking down the walls and starting again, we are wondering what to do. We have a contract with the builder, so we can't fire him and engage someone else. Should we try arbitration? Talk about a reduction in price?
