    My favourite light fruit cake is:-


    12oz Self Raising Flour
    1.5 tsp Mixed spice
    7.5 oz Dark Brown Sugar
    7.5 oz Margarine (Butter!)
    3 Large Eggs
    18oz Mixed dried Fruit, Nuts and Cherries
    2 fl oz Brandy
    5 fl oz Milk
    Demerara Sugar for sprinkling


    Place all ingredients into a large bowl, beat together with a wooden spoon until well mixed. Place into a lined round or square 8in cake tin and smooth top. Sprinkle with Demerara sugar.[FONT=&quot]Bake at 300[/FONT][FONT=&quot]°[/FONT][FONT=&quot]F (150[/FONT][FONT=&quot]°[/FONT][FONT=&quot]C, 140[/FONT][FONT=&quot]°[/FONT][FONT=&quot]C fan) for around 1 hr 50 min. or until a skewer comes out clean.[/FONT]

    I enjoyed the first episode, and so far I think Michael and Steph are my two favourites. However as Mister CJ pointed out, the bakers do tend to grow on you as the series goes along so I will probably warm to the others too.
