Using frozen tomatoes in salads.

I Like tomato Salad and use this ingredients:
2 Tomatoes
3 Cucumbers
1 Red Onion
2 sprigs of Fresh dill
1 tbsp Extra Virgin Olive Oil
Pinch of Sea salt
Pinch of Black Pepper0 -
I've made literally bucketloads of freezer salsa this year after doing a test run with a small amount of the recipe. It is cooked before freezing so not quite the same as a fresh one but I defrosted a portion to try before I made a vat full and it ended up being so nice I actually made four more batches!
*Will edit later and post the simple recipe I used*
Freezer Salsa
4 cups diced toms
1 med gr pepper diced
1 lge onion diced
1 seeded jalapeno chopped
1/2 cup tom paste
1/4 cup vinegar
1 tbsp. sugar
1 tsp salt
2 tsp garlic powder
1/2 to 1 tblp cayenne less if you don't like it hot!
The other things I did was dehydrate at least three lots of nine trays and then vacuum sealed them into various size jars.
The last few I've been roasting on trays with olive oil (or chilli oil/basil oil etc) and sprinkled with fresh herbs from the garden and garlic,salt and pepper.
I bag them up into snack bags then flatten these into a large gallon ziplock.
All of these hold the freshness of flavour really well0
