Sliced ham, chicken, quark and crabsticks

My OH and I were lucky enough to go away for a long weekend leaving the kids with a friend in our house. I had ordered a Tesco online shop to be delivered the night we went to leave food for while we were away. Due to an error on their part, they delivered someone else's meat (maybe more than one persons) in place of our dry stuff, and when I phoned them today they told me to keep it.

The problem is I now have a vast amount of cooked thinly sliced ham with a use by date of only a few days. I have about 1.5kgs of the stuff! They also brought a lot of chicken (two full birds, two packs of thighs and a few kilos of chicken breasts), some crab sticks and a tub of quark.

The chicken I have frozen. Not sure how successful freezing the rest in its uncooked form would be, so seeking ideas for:

1. the ham

I do make pizza quite a bit, so can get rid of some of this by making pizzas to be frozen. We're not big quiche eaters but could get away with one for immediate consumption, or maybe an omelette. That will still leave about a kilo of the stuff to get rid of though! All other ideas gratefully received?

2. the crab sticks

No idea how to use these up! They have quite a long use by date on them.

3. quark

I am sure I have used this in the past but can't remember why or in what. Any ideas about things I can use it for? If it also involves ham or chicken or crabsticks so much the better ;)

4. chicken

We eat lots of chicken so shouldn't have a problem with this, but if anyone has any fab chicken recipies, I can afford to take a risk with some new ideas given how much of the stuff I have stock piled.

Have slow cooker, and like cooking, so willing to try most things.

  • I've no idea about the crabsticks I'm afraid but you can freeze the ham. I'd portion it up first so you can take out a little at a time. Also write how many days left it has on the freezer container. You could make loads of sandwiches with it and freeze those (obviously don't freeze the ham, defrost it, make sandwiches and freeze again).

    I'm not sure whether you can freeze quark, personally I'd chuck it as I think it's horrible :D You can use it in cheesecakes though and it's not too bad then.

    My sister makes sandwiches for a whole week for her entire family and then freezes them on a Sunday evening. Each day they remove a round of sandwiches from their respective boxes - so try freezing the ready-made sandwiches!

    My mum likes quark, she uses it with jelly - you make up the jelly as normal with boiling water, whisk in the quark and leave it to set. It goes kind of blancmangey!

    Seriously though.. good luck! Your ham ideas sound good, and I'd second what someone else said about portioning it up and freezing it.

    Quark - I have no idea at all!

    Crabsticks - urgh!!! Hope you like them.

    Let us know what other ideas you come up with, and whether they worked.
