Title register and declaration of trust

Hi. I have had a will drawn out for me with a declaration of trust.
On the trust my mortgage lender is stated.
I want to change my mortgage provider. Is it easy to change the trust myself without a lawyer.
Do I need to do anything at the land registry as well for thos?
Why does the mortgage lender need to be named in the trust? Can't I just say current lender in thr title register? Because the lender could changed.
