    Mon ~ greek pasta bake

    ok.. you've piqued my attention now. Could we have the recipe for this please? OH adores greek food, and i haven't cooked much of it (not since i tried doing a sort of cross between spag bol and macaroni cheese.. without cooking the pasta. It was crunchy, i'll say that much...oops!)

  • From The Martha Day 1000 recipes cook book

    Described by her as ~ An Excellent main meal called pastitsio in Greece, this recipe is is both economical and filling.

    Serves 4

    1 tbsp Oil
    1lb minced lamb
    1 onion chopped
    2 garlic cloves crushed
    2 tbsp tomato puree
    2 tbsp Plain flour
    1/2 pint lamb stock
    2 large tomatoes
    4oz pasta shapes ( not tubes)
    450g tub of greek style yogurt
    2 eggs
    seasoning
    green salad to serve

    1. preheat oven gas mark 5, heat oil and fry lamb for 5 mins. add onion & garlic and fry for 5 more mins.
    2. Stir in Tom puree and flour. cook for 1 min.
    3. Stir in stock and season to taste, bring to boil and cook for 20 mins.
    4. slice toms, place meat in oven proof dish and arrange toms on tops.
    5. Boil salted water for pasta and cook for 8 - 10 mins until al dente. drain well.
    6. Mix together pasta, yogurt and eggs. Spoon on top of the toms and cook in preheated oven for 1 hour.
    7. Serve hot with crisp green salad.

  • For the problem of factoring in the turkey leftovers, I have a suggestion but not sure if it would work for you as I never meal plan more than a week in advance. What I do when we have roast chicken, for example, is make a rough guess as to how much chicken will be leftover based on how many are eating it, then decide on a meal using the leftovers. BUT I make sure I have some appropriate bulking ingredients in, in case OH eats half his body weight in chicken the first night.:rotfl:

    So if you think you might get, say, one family sized turkey curry from the leftovers, then put that on the meal plan and make sure you have lots of veggies in to bulk out the curry if you have less turkey than planned. Or if you want to make a pie, have some ham in the freezer which you can defrost to make turkey and ham pie - or leave the ham in the freezer for another time if you've got loads of turkey.

    Don't forget that you can also freeze the cooked turkey in portion sizes, which you could then work into your January / February meal plans. Stops you going turkey-mad by New Year.:D

    i did try this last year i think i froze 2 lots but got the quantities a bit mixed up so one lot had too much and th other too little lol. maybe i should weigh it this year before i bag it up :)
