how long will home made biscuits keep?

I'm hoping you can help me. Instead of buying Christmas cards I had the idea to give them each a personalized gingerbread man.
I've done my list and i'll need to make about 100 biscuits:eek:
I was thinking of making the biscuits over 2 or 3 days, then icing them all on 1 day, packaging them in food bags the day after, and then giving them out.
I was wondering if anyone has any idea of how long the biscuits will last, but still taste "fresh" so I know how much time I have to decorate them!

lol.. they last about 10 seconds in here!!
