How long are you wanting to keep it warm for?

For 2-3 hours I'd cool it quickly and reheat.

Put onto a cold plate, into the freezer for half an hour, then keep in the fridge and warm it up when required.

Aree daveyjp that you need to cool quickly and then reheat when needed. 2-3 hours is far too long to keep food warm.

If there's rice in it you do need to be careful.

If you're keeping it warm it must be above 63C all the way through.

Can you give a little more information on the reason. At the moment all I can see is a very dodgy tummy!

63 degrees centigrade is classed as 'hot holding' if it drops below that you need to reheat to 73 degrees to kill any bacteria. I would cool as above and reheat if it is for over 3 hours.
;) If you think you are too small to make a difference, try getting in bed with a mosquito!

    Agree - hot hold

    Im assuming this is takeaway?

If this is the case, it would have cooled by time of delivery and with takeaway rice, I certainly wouldn't even attempt to keep warm, Even bringing back up to temp from warm is just too risky with take away rice where you don't know how its been stored in house

When I worked in a kitchen, if anyone ordered curry and rice to take out, Id go out and question if they were heading straight home to eat. If they were staying on to have a drink, Id give them cold rice and reheating instructions
