Extra Special Cookie Recipe Pls!

Hi, I want to make my friends some cookies as they have all been helping me out so much lately (I'm 6 months pregnant with a 2 1/2 year old and having health issues). I am giving each of them a Box of Friendship - but as it is mainly an empty box I wanted to bake some really nice cookies to give with the boxes. I dont want them to be festive, just yummy!

  • I made some almond shortbreads yesterday - 5oz plain flour, 1oz cornflour, 4oz butter, 2oz sugar, 1tsp almond extract. Rub in the butter till it all comes together. Roll into a log and cut off slices. Bake at 160C for 15 mins until barely coloured. Cool on a rack.

    Using butter makes a big difference to shortbread IMO
