I like to make bread pudding when I have left over bread. It will serve as a great filling pudding with custard as well as a mid day snack and freezes really well and costs pennies to make a huge slab
My lunchtime meals ( in work, micro and toaster ) are either left overs - mainly pasta based, pasta salads, cheese on toast, scrambled eggs, beans on toast, tinned kippers, sardines, mackerel, jacket spuds with beans or cheese
My work is heavy and cold, I need something hot and preferably stodgy at lunchtime which is why pasta features a lot and protein rich to keep my energy levels up so Im not reaching for a snack late afternoon0
