    Don't you mean a Simnel Cake..?

    Although strictly, it should have been eaten by the fourth Sunday in Lent - which was March 31st this year. So it is past.

    More of a surprise though was seeing a display of full-on festive dinner-type turkey products in a well known shop last night...!

    i have made a choc sponge with a layer of chocolate and too many mini eggs...noone like marzipan here so wouldnt do simnel but chocolate is well received happy easter xx

    I’ll be making a vanilla sponge cake with buttercream icing with mini eggs and fluffy chicks on top because we don’t eat fruit cake.But that’s my version of Easter cake, I make it every year.so I suppose it’s traditional in this house x

    I make simnel muffins rather than simnel cake - legacy of far too many years with an unreliable oven. They are quicker and more reliable, freeze well and have the advantage that you can vary the amount of marzipan if baking for those who dislike or can't take a lot of it

    I made a carrot cake, I put mini eggs on the frosting.

    However the carrot cake wasn't that good, usual recipe but it was a bit bland, not sure where I went wrong.
