Has anyone got a recipe for using up brussel sprout stalks please? I got a big 'branch' of them in my veg box today and once the sprouts are off it there seems to be loads, can it be eaten?

Not aware that the stalk itself can be eaten. The leaves (tops) can be used like cabbage though if they are still on it ...
I suppose that it is possible you could chop it and use it with other veg for a veg stock, but other than that I would suggest that it is destined for the compost heap (if you run one).0 -

Is this the top small, sprouty leaves? You can steam them with some scices of cored (unpeeled) eating apple and crushed juniper. You can also add some pices of crispy bacon or pancetta if you eat it.
This recipe looks good, too - Ginger sprout tops.
Give the stalk a bash along its length with a hammer before putting it into the compost heap - it'll rot down more easily that way.

Thanks guys, its the actual stalk, I think I may have gone too 'os' on this one!
Off to the compost heap I go then, can't blame a girl for trying!

Instead of bashing it and throwing into the compost, dry it out very slowly in the airing cupboard. It will become very hard and incredibly strong due to its fibrous nature.
Once thoroughly dry, drill a hole through the stalk near the top, thread a piece of stout string through the hole and then .....
... use it to clout hubby and kids whenever they dare to make faces at your OS ways, your cooking ... !!!!!! (only joking)0 -

My DD was most shocked when she first saw a stalk of sprouts at the Farmers Market-apparently she'd always thought the sprouts grew in little rows in the ground like cabbages.Sprout stalks are now known as "sprout trees" in our family.0

To save some of (your own) energy when preparing the stalks for the compost heap - put them in front of your car (or behind if you are going to reverse) so that the tyres crush them for you.0

Well OS'ers, I'm very disappointed.
I saw this thread this morning before I went to the market.
Whilst shopping at the market I found.......Sprout Trees. I too call them this, stallholder's faces are a picture, when you ask for a sprout tree. :rotfl:
So, I bought one, knowing I would return to find a fab recipe to use up the tree.
And I've no compost heap either.
I've got a slow cooker, surely there must be recipe for it, after all we are the board who can make a 3 course meal for 6 people from a pound of potato peelings, last weeks chicken bones and a tub of bicarb.:DOfficial DFW Nerd Club - Member no: 203.0 -

I have no recipes for sprout stalks I'm afraid. But just wanted to say hats off to you for asking the question - a true OS enquiry!0
