Advice on refridgerating cooked rice

Hi,

I am planning on making egg fried rice for dinner tomorrow night. The recipes I have read have said it is best to use cooked refrigerated rice so it doesn't stick together.

My question is - could I cook the rice tonight and leave it in the fridge til tomorrow night? Or am I risking bacteria taking hold??

    whenever i make it i use yesterdays rice and havent had any problems so far, think as long as it heats properly its fine

  • Before I started reading the threads on this forum I had no idea that people considered rice a food poisoning risk. No doubt someone will be along soon to let you know about the apparent risks of reheating rice... But I have been keeping cooked rice in the fridge (for several days sometimes) and reheating it when needed all my life and have never been ill from it. My mother has always done the same, so has my husband. I think that people who are poisoned by rice have probably eaten it in a restaurant where hygiene standards aren't the best. Enjoy your egg fried rice!

    Someone will probably come along and prove me wrong now by saying they've poisoned themselves at home with rice:rotfl:.
  • If you rinse the cooked rice in cold water so that it cools down quickly, and then make sure it is properly heated through when you re-cook it, it should be fine.

    I agree.. this is what i do when i want to do egg fried rice or nasi goreng (Indonesian fried rice).

    having said all that, and despite my warning him, my OH loves to eat cold sticky plain white rice that's leftover from dinner. *shrug*. he's still alive!!

  • Rice is fine for several days in the fridge, i freeze mine too.

    I just rinse with cold water then pour over boiling hot water is fine.

It's when it has only been partly heated, or left sitting at room temperature for a while that it would cause a problem. Having said that I make up little rice salads and put them in hubby's lunch box, which isn't kept chilled, and he's alright(most of the time):rotfl:

    The food poisoning bug that's most associated with rice is Bacillus Cereus. It's a wee little beggar of a bug that is capable of surviving adverse (for it) conditions by forming spores (putting itself into hibernation really).

    So if you have some raw rice that's got some of the bugs in it, the initial boiling will make them go into survival mode and form spores. you'll eat the rice (and spores) fine when it's hot with no side effects. BUT if you leave the left overs out in the kitchen for a while at a nice ambient normal room temperature heat, the spores will transform themselves into the nasty wee devils again and could potentially give you a nasty dose of food poisoning.

    The secret with rice is to make sure you cool it rapidly after cooking and refrigerate it as soon as possible. Then, when reheating, make sure it gets above 70 degrees centigrade.

    Quite often people will blame the meat of an indian takeway for dehli belly the next morning when in fact, it could be the rice that's the real culprit.

    that's the point.. it isn't. refridgerated, i mean. i leave the rice i've cooked and not eaten out for a couple hours, watched the box and relaxed and gone to do the washing up. If there's a lot of leftovers i either mix it with the curry or whatever we had it with to reheat well, or if i've deliberately made lots to do EFR/nasi goreng, i put it in a box in the fridge. if there's only a lil bit i don't bother (and just throw it away.. *hangs head in shame*). If i haven't done the washing up that night .. then sometimes OH gets the munchies around 3am and.. well. by that time its been sitting out 6-8 hours. :eek: :eek::eek: no, i wouldn't recommend it either!

    Oh no,

    I just had curry and rice leftover from last night and I didn't refrigerate the rice - just had it in a pot.

    What am I to expect???? I'm serious. I didn't realise it was such a risk.
