Morning all,
I bought loads of cheap bananas yesterday (50p for 23) and after eating some and making 2 lots of catowen's banana cake I still have 7 left!
Does anybody have a veggie banana recipe that I can make for tea tonight?
Many thanks

I do like a challenge, and this one takes some beating
How about Savoury Banana Drop Scones. They sound good

Looks wonderful, Penny, but I don't have many of the other ingredients and not much money which is why I bought the cheap bananas!!0

You can make lovely curries with bananas (especially if you eat fish too, it goes well with prawns) but I think you'd need some other veg to add to it TBH - banana on its own would probably be too cloying. That man is richest whose pleasures are cheapest. Henry David Thoreau0

4 large, firm bananas
2 large onions
1 pack of spring green or 1 hisp cabbage or half a savoy cabbage (optional)
2 tablespoons butter or marg
salt
lemon juice
Peel bananas and cut into thick rounds; peel and slice onions, seperate into rings; shred cabbage.
Saute onions in the butter in a wide pan until about half cooked, ie soft but not coloured.
Add banana slices and fry for about ten minutes longer, turning contents of pan occasionally so that contents colour on both sides OR for 5 minutes if using cabbage.
[If using cabbage, pile it into the pan on top of the other ingredients, put on the lid and leave for ten minutes.
Take lid off pan and turn ingredients - depending on cabbage type used it will either be cooked or need a little longer. Cook with lid off and turn occasionally.]
Season with salt, sprinkle with lemon juice and serve hot.0
