keeping mashed potato warm

How do I keep the mashed potato warm while we eat our starter and have a breather in between courses?

Any advice welcome please.

    I put it in a covered pyrex dish in the oven on a low gas and that keeps it Ok for 30-40 mins. If its in there too long though, the edges dry out a bit

    I just pop it into the oven with the plates to keep warm. I don't cover it because I like it to colour a little on top.

    I just keep it in the pan, on the hob, at the very lowest setting, and I put a plate over the top to keep the heat in.

    I stir it occasionally,until needed, and it's fine, no burnt pan and I have a terrible hob.

  • I saw this on Barefoot Contessa this week on UKTV food, she put her mash in a pyrex bowl over a saucepan of just simmering water. This prevents it drying out apparantly.

    A couple of years ago I bought a table top hostess unit from Tesco. It has 3 pyrex bowls with lids on. It generally only comes out once or twice a year but its brilliant at Xmas.
  • I put mine in a covered pyrex bowl and about one minute before we are ready to eat the main meal, I give it a quick spin in the microwave. No use of an extra hob ring, no loss of moisture (because it is covered) no risk of browning or drying out.

    I pour hot milk into the pan with the cooked potatoes, leave it on the hob (switched off but warm still) and mash it when needed - the hot milk keeps warm for ages if left on a warm hob and nothing dries out :)
  • Oddly enough I read this yesterday.
    According to Tawra (Living on a Dime) you can keep them in a slow cooker on low heat for 2 hours without them suffering any degredation etc. Any longer and she says they get dried out.
