Salt Beef?

Hi everyone.
I know there are hundreds of posts with recipes, but I can't plough through all of them at the moment as am trying to pretend that I'm actually doing some work ;)
I bought a joint (?) of salt beef yesterday, and would love to cook it overnight so I can have it in my sandwiches tomorrow. Only problem is....I've not got the faintest idea what to do with it.
I know I'm supposed to soak (boil?) it first, to get rid of some of the salt, but I don't know how to cook it....how much liquid do you have to use, what flavourings do people put with it etc etc etc.

I'd be so grateful if anyone could let me know how they cook it....my sandwiches will thank you!

    Is it on or off the bone? Flat or rolled? I buy kosher salt beef, so my recipe is for the kind that you would get in a New York deli. I have a friend whose family are German and they actually boil it and then fry slices of it in a pan.

    I buy a flat piece off the bone. Its already been pickled, but I do give it a rinse under the tap. I cook it in a large pan of water (stock pot sized), with a few bayleaves, some peppercorns, a couple tsps brown sugar and a few tablespoons of malt vinegar. I bring it to the boil on the hob and skim off the scum that floats to the top then put the pan in the oven on about 120-130'C for about 2 hours.

    Some people press it once it cools but I never have.

    Your recipe sounds great, thanks. I wasn't sure if you had to cover the meat, or just put a little liquid in the bottom of the cooker, and I'm pretty sure I've got most of those ingredients lurking in my cupboard somewhere, so thanks!

    You need to make sure the meat is properly covered in water and has a little room to swim about. Be warned, it will shrink a fair bit. I've never tried it in the slow cooker. I've only got a small SC and because you need a large piece of beef, I've never tried to slow cook it.

    Salt beef is normally a piece of pickled brisket btw.

    Good Morning all,

    I've been given a piece of RAW salt beef, I've only ever brought it cooked before.

    I think I should boil it, does anyone have any experience of cooking their own salt beef?

    If you Google salt beef recipe you'll get loads of hits - just start from after salting the beef.

  • I've had salt beef before and cooked it in the slow cooker. Was delicious but obviously the 'stock' is too salty to make gravy with
