Remortgaging if out of the UK

Quick question to be honest, me and my girlfriend are looking to leave the UK but wanting to keep our property and potentially rent it out whilst being away (being away = long term - I have a job in Australia).
Our fixed term mortgage will run out when we are out of the UK. We would want to change our mortgage provider and we would want to get a either a buy to rent or a fixed term mortgage again.
I guess my main question is do we need to be in the country to do this or can this be handled from outside the UK? Thanks in advance.
