Single vegan - food - buddies wanted

    Have you looked at the Happy Pear and BOSH channels on YouTube? They do use a lot of vegetables in their dishes but they put a lot of additional ingredients in the recipes which transforms the dish. I've really enjoyed every meal I've tried of theirs so far. The Happy Pear also have some oil free dishes on their channel or you could just not add the oil.

    I've gone a little fancier this week for lunches, with a vaguely buddha bowl-like combo.

    I've made quinoa with sunflower seeds, roast mushrooms, roast butternut squash, battered crispy tofu and cauliflower, a korean chilli sauce and a green salad.


    Midweek is likely to involve aloo gobi because the cauliflower was an absolute monster so I've still got half left, and there's a bag of potatoes in the cupboard that need using. Still got some chickpea burgers left from last week to have for dinner, too.

    Next task: Lots and lots of DIY

    Have a look at Maangchi's channel on Youtube, korean food, leave out the eggs and meat, use rice noodles etc. Adapt the recipes.
