Marshmallow cake topping

Hi, I regularly buy a coconut sponge cake from the co-op, but was wondering if I could make my own? The sponge and filling I can do easy peasy, it's just the marshmallow bit that holds the coconut on I don't know where to start with. It's really yummy, the whole reason I buy the cake, so I want to get it perfect!

I have found a picture of the cake here http://www.expatshopping.coop/index.php?main_page=product_info&cPath=17&products_id=191 although the packaging has changed since then, and the cake is nicer now as it didn't used to have jam in the middle with the buttercream...


Any ideas on the marshmallow topping?

  • Sounds like what americans call marshmallow 'fluff' , its sold in tubs over there. I'm sure I've seen it in aldi or lidl recently but I'm not sure which, sorry!
  • It's not actual marshmallow, because marshmallows aren't veggie and the cake is...

    And I thought marshmallow fluff is the same thing thats inside those chocolate snowballs? I find those quite sickly and the cake topping isn't so sweet... Will lookout in aldi and lidl though and try it..

  • Try this: Courtesy of Nigella

    2 Large Egg Whites
    125ml Maple Syrup
    125g Caster Sugar
    1/4 tsp Cream of Tartar
    1/4 tsp salt
    1 tsp Vanilla Extract
    1/4 tsp Maple Syrup Extract (optional)

    Put everything in a bowl over a pan of boiling water, with an electric whisk beat for 5-7 minutes, it should stand in peaks like meringue, take the bowl off the pan and away from the heat and beat in the extracts for a minute.

    It is absolutely delicious and just like marshmallows.
