Freezing sour cream?

Good evening lovely OSers,
I have a conundrum for you....I bought sour cream to have with fajitas the other night but even the smallest pot is too much considering there are only 2 of us. Do you think it's freezable? If not, any ideas as to how to use it up? I hate wasting things but I don't think it'll keep until the next batch of fajitas!
Any ideas gratefully received xx

    hi studentsaver, the same thing happened to me the other week, i did look at the tub and it said not suitable for freezing but someone here may know better!

    Hi there

    I have to say that i freeze it :p ..but then i freeze anything that stands still long enough ;) it may try and split when defrosted..but a good whalloping with a spoon brings it back

    If you don't want to freeze it... saute onions, mushrooms n peppers...when soft tip in the sour cream and seasoning..and it makes a lovely sauce with chicken etc..or over pasta... just don't let it boil or it will split..will still taste nice even if it does..

    spoon it into jackets too

  • Thanks MrsM, that sounds delicious, I'll definitely try that this week! I'm much the same, I freeze anything that looks like it might go off before I eat it but sometimes I think I ought to check with people wiser than me!

    studentsaver - note that sour cream lasts quite well in the fridge! a lot longer than ordinary cream, and don't worry that it is already open.

    you can add it to almost every soup or sauce - and how about putting it on a baked potato?

  • How do you know if sour cream has gone off? (obviously when it turns green and walks out of the fridge is a good indication)
    Also along similar lines can Phillidephia type soft cheese be frozen, full fat variety? I'm forever throwing it out. ( turns green very quickly )

    When I do fajitas I use creme fraiche and use the leftovers to make a simple sauce for pasta; just creme fraiche, grated fresh parmasan and black pepper ;)

    it goes fab with fried bacon, mushrooms and courgettes - original recipe was from waitrose, used parma ham and also had shallots in :)

  • if i have any sour cream left i always add a few spoonfulls to mashed potato instead of milk and butter

    does anyone know if you can freeze sour cream? If not, any cake/biscuit recipies so I can use it up?!

    Help please

    I've just defrosted some sour cream - it's very runny now although not really separated - is there any way I can rescue it? I've tried whisking it but it's no better....
