Have carrots, parsnips and courgettes that i need to use and was thinking of roasting them along with a red onoin. Is it ok to part cook this say for 20 mins then freeze for another day.

I would par boil them,(the courgeuttes just very lightly, let them cool and then freeze. When you go to use them just toss in oil and roast from frozen.0

I meant par boil them all but just do the courguettes for less time than the carrots and parsnips.0
