After doing a big roast for lunch as many of the family were here, I really didn't want to cook again this evening, but we went for a long walk this afternoon & I was hungrier than, say, a sandwich would satisfy. So I though I'd reheat the remainder of Friday's curry & was puzzling what to have with it - didn't fancy cooking rice, didn't have any naans & can't find my poppadum stash. Then I remembered flatbreads...
So I threw a ladylike handful of plain flour, another of gram flour, a pinch of salt and a tsp of baking powder into a bowl. Added a shake of garlic powder, plus nigella seeds and coriander leaf, then mixed it up with a tablespoon of Greek yogurt and enough water to make it spoonable. Heated a small, heavy frying pan with a splash of olive oil and a knob of butter, ladled in half the batter & bingo! Two minutes later there was a crispy golden flatbread. That amount made two, inside about 5 minutes, and the second one vanished just now into a passing daughter.
Why don't I think of them more often? And does anyone have some tried & trusted "real" flatbread recipes to share, please?
