Can i make a christmas style cake with these?

Evening all,

I want to make a Christmas cake for the first time and I have just gathered together these ingredients from my cupboard:

Soft light brown sugar
Molasses sugar
black treacle
currants
rasins
glace cherries
nutmeg
cinnamon
dates


Does anyone have a recipe, or knows of one i cam use these ingredients in?

  • Yes, you can use all those in a Christmas cake. You will also need flour, eggs and butter of course. The dried fruit content of any Christmas cake recipe can be varied at will, so just replace the total weight of dried fruit for the same weight of whichever fruit you like. I would definitely recommend soaking the fruit overnight in a few tbsp of alcohol though. Brandy, rum, cointreau, whisky. Also feed the cake over the next few weeks with alcohol.

    You can't go wrong with Delia when it comes to Christmas cakes. You don't have to put nuts in, or peel-replace them with more fruit.

  • Yeah, I have the flour eggs and margarine, does it have to be butter? I could get some tomorrow, am just going to soak my fruit in tea as i don't have any alcohol in the house.

  • Try using fruit juice to soak the fruit in, OJ is good, mango might be scrummy

    I use an really OS method for fruit/Xmas cake, it's easy to remember and you can use any fruit you like, or have in the cupboard, here goes----

    POUND CAKE

    for every pound of basic cake ingredients, use one pound of fruit. Like this----

    eggs 2 = 4 oz
    sugar 4 oz
    butter 4 oz
    flour 4 oz

    total wt= 16 oz

    fruit 16 oz


    don't forget your spices, lenon rind and/or orange rind, maybe a drop of brandy if you have it in !!

    Good idea, you definitely need some moisture -some cakes can be really dry. Do try and add some alcohol later though if you don't abstain.

  • Well my adapted Delia cake is in the oven as i type!! Only had a 1LB loaf tin plus a deep fill muffin tray so have used both! It smelt divine!! I thought i had better make some small ones just to check the larger one will be ok;)

    Well its a waiting game now!!

  • Just to update

    Have made my cake and double wrapped in greaseproof then 2 layers of foil and it is now tucked safely away in an old celebrations tin. Have tested the mini cakes and I have to say as a first time christmas cake baker I am pretty pleased!!
