  • I make fishcakes with any tinned fish a la Nigel Slater. Like Quackers says just mash and fish- equal quantities is the secret ;) Breadcrumb and fry in butter. Gherkins are definitely a good idea, or capers for piquancy.

    You could do the same thing with the corned beef.
  • these tuna wraps are delicious

    tuna
    boiled eggs mashed with mayonaise
    red pepper
    red onion
    sun dried tomatoes
    tabasco sauce, salt and pepper
    mix the above ingredients together, squirt some mayo on the wrap, put some mixture in wrap and grill
    alternatively add pasta and have a salad.

    You've got a lot of tinned soup there. Could you have some nights when you have soup followed by a pudding? Or get OH to have soup as an after school snack?

  • some meal ideas
    pizza and garlic bread
    spaghetti & meatballs - meatballs in gravy, add your bolognese sauce and any spices etc & spaghetti

    you could also bulk up most of the suggested meals with any of your veg/ pulses/ lentils etc and freeze extra portions
