Tinned pineapple is fine - the tinning process denatures the enzyme which reacts with the protein in geletine.

    Hi there

I think you will find that tinned pineapple won't set very well either...sorry.. upside down cake ?

  • I've read that the enzyme in pineapple that stops jelly setting is destroyed on cooking and tinning.

I've also read of people having trouble setting tinned pineapple jelly.

    Take your pick

Sorry, not much help, am I :o

This one looks like what my mother used to do.

Hawaiian toast is a favourite here - toast, drained tinned tomato, ham, pineapple, cheese, under the grill.

    That's more helpful :D

  • Serve fruitless jelly with tinned pineapple on top ;)

I've also heard that tinned pineapple works in jelly but I've not tried it.
  • I've used tinned pineapple in jelly, but keep it quite dry, it's the natural juice that stops it setting. You could maybe make your jelly a little bit less dilute as well.
