I made a great carrot cake last week, I'm sure it was on this forum..
It was very simple- eggs/sugar/oil/flour/mixed spice/carrots and a few raisin (no nuts or icing or anything fancy).
Can anyone pls point me in th right firection (I was sure I saved it too:o ).
I made double in a traybake tin and cut it into squares for luchboxes- excellent non crumble texture and froze well too. Just wish i could find it!
