I am salaried and contracted to work a minimum of 37.5 hours a week, anytime from monday-saturday 8am-8pm (which ever days/hours suit me), I normally work them mon-fri. If i take a weeks holiday do i have to submit holidays for mon-sat or just the days i normally work. If i just took mon-fri as holiday, would i be expected to work the saturday?

Why don't you book holiday in hours as that's how you work? So book off 37.5 hours over Monday to Saturday.Don't listen to me, I'm no expert!0

As you work (or can work) various hours each day then leave should also be booked in hours0

No one can tell you without your contractual information.
There a number of typical ways to deal with this but which your contract uses is guessing.0
