Slow Cooked ham for too long, how to rescue it?

Annoyingly we forgot to turn off the slow cooker and over cooked a massive gammon ham for an hour too long. Got it out on the hurry-up, cut off the fat layer and sliced it while still hot. Picking at it it’s quite dry, we just had some with mash, egg and smothered it in baked beans which was ok, but I really wanted to bag it and freeze it for meals through January. Does anyone have any tips to rescue it or the best way to serve it other than covering it in beans or gravy?

    Chopped or pulled by fork, saut!ed leeks, white sauce, cover all that mix with mash and bake, yummy.
    Pieces thrown into a veg and noodle stir fry.
    Finely chopped, mixed with grated cheese and a bit of mustard, spread on thick slices of a good loaf, grilled till golden.

  • No. It is unsalvagable. I can dispose of it for you. Please store it sliced in your freezer and I will collect.

    If I’m not there in a fortnight, you will have to again smoother it in baked beans and dispose of it yourself.

    Thanks Artytarty we will give these a go, so pleased it’s not just going to be gravy or beans!

  • Do you have, or can you get access to a vacuum packer?
    I have had some success with this: slice, spoon liquor over each slice,then put together as best you can, and vac-pack the lot.
    Otherwise, dice, open freeze the dice, put into bag, and use in all the ways recommended above. Also: spanish omelette and its variations, add to any casserole, make a bean casserole with diced ham in it.
    Once, when I really needed a 'centre piece' and had ruined the ham, I diced it, made a savoury jelly, added some herbs, and made a terrine.

    I'm thinking it could have an apple or cider sauce to make it less dry. Pour over before bagging and freezing......
    or maybe an orange / marmelade sauce?
    Then serve with baby potatoes and green veg.

    Buildersdaughter I don’t have a vacuum packer, but this sounds a very interesting way to rescue food, I’ll take a look online and see if I can pick one up cheap. Thanks for the tips, with or without a vacuum packer, I’ll try these ideas out on OH!
