I would be more worried about the rice than the chicken. I wouldn't myself.0

Chicken, reheated hard enough, is safely edible even if rubbery.
Rice just shouldn't be reheated.0 -
That's not strictly accurate. If you cook rice then cool it and fridge it straight away so it's not hanging around at room temperature it can be reheated.
Not sure I'd want to risk poisoning myself with reheated fried rice that'd been sat around for a while though. All shall be well, and all shall be well, and all manner of things shall be well.
Pedant alert - it's could have, not could of.0 -

Yes, the latest thinking seems to be exactly this, cool quickly and get it in the fridge. The best thing about the future is that it comes one day at a time. (Abraham Lincoln)0 -
The rule is cook once, reheat once. If you have used cooked chicken then reheated it I would not use it again.0

Thanks all. The plan was to eat it cold for a work lunch so I wouldn't be reheating the rice.
The problem is the chicken was slow cooked shredded and frozen. I want to defrost it and use it in chicken fried rice for dinner and then cold the next day for lunch0 -

If the chicken is already cooked and shredded and you are eating it cold the next day why do you need to cook it again ? cook your rice as normal without the chicken, once rice is done and cooled then add your chicken and put into fridge ASAP.0
