I’m currently volunteering but only been there 1 day a week for a month. I want to ask them for a reference becuase the job I’m going for is relevant to the skills I’m learning there. Would an employer accept a reference for such a short time?

They probably will. Especially if they are entry level roles - mostly people recruiting entry level roles won't expect brilliant references and a long employment history. Anyone who is well presented, friendly and reliable will often do!0
