Tons of vegetables to use quickly!! Help please!

Hi all,
As the title explains I have loads of vegetables that need using ASAP.

Problem was that I did a huge shop and then due to illness didn't get round to doing any cooking this week. I don't want everything to be wasted!!

Any ideas on how I can use it all up??

I have:
2 packs of cherry tomatoes
1 pack tomatoes on vine
1 pack celery
1 cabbage
2 packs baby sweet peppers
2 packs trimmed fine green beans
1 pack baby corn
3 leeks
About 8 peppers
1 broccoli
1 pack sweet pointed peppers
1 pack carrots
1 pack sweet potatoes
1 pack sweetcorn cobettes
About 12 potatoes - only small ones


Obviously this is a huge waste if I don't think of a way to use as much of it up as possible!

I also have:
pasta
rice
pearl barley
1 onion
garlic
5 cans chopped tomatoes
4 tins beans

plus various herbs, spices, sauces etc....

Any suggestions welcome!! :)

  • Things like the peppers can be cut up and frozen for future use.

    I see many combinations there of vegetable soups which again can be frozen.

    green beans - blanche then freeze

    tomatoes - cooked down for conc frozen puree as a starter to sauces and soups - freeze in small amounts

    that's just for starters

    1 pack celery will keep another week/ soup/ slice and freeze
    1 cabbage
    2 packs baby sweet peppers
    2 packs trimmed fine green beans blanch and freeze
    1 pack baby corn freeze
    3 leeks leek and potato soup - freeze if wanted
    About 8 peppers slice and open freeze
    1 broccoli
    1 pack sweet pointed peppers
    1 pack carrots should keep
    1 pack sweet potatoes will keep for ages in the fridge
    1 pack sweetcorn cobettes freeze
    About 12 potatoes - only small ones


    Obviously this is a huge waste if I don't think of a way to use as much of it up as possible!

    What about a lovely veg curry... using the carrots, peppers, sweet potatoes ?

    I would use some of the broccoli to make a quiche.

    Not sure I would do anything with the cabbage other than cut it up and freeze.

    To blanche vegetables, add them to boiling water, cook for a couple of minutes and then plunge them into cold or iced water to stop them from cooking further.

  • Last night, we had a vegetable bake - three large potatoes, sliced + one large onion, sliced + sprigs of cauliflower. Layer in a casserole dish, cover with a cheese sauce, top with grated cheese and bake until veg are softened and cooked. You could add thin layers of almost any of those vegetables (tomatoes, celery, sweetcorn) and still have an appetising meal.

    Along with others, I also would make a huge batch of soup to avoid wasting good vegetables. I rarely blanch anything (too much like hard work) and find it makes very little difference to the final product, especially if you make a point of removing these particular veggies from the freezer at the first opportunity.

    slice and steam or boil the cabbage then freeze in 2 portions to make galette.

    Here is Churchmouse's alteration to the original recipe (which was too stodgy.) Hers is perfect (and we're having it tomorrow again!)

    You have 3 packs of peppers? Can you roast them and make a dip or add them to hummous?
    May all your dots fall silently to the ground.
  • I always cook too many pots and veges for sunday lunch and then turn them into bubble & squeek extreem by bunging them in the kenwoood with the K beater and adding a spot of the left over gravy.

    You can then portion them onto a lined baking sheet by using a round biscuit cutter, pop in the freezer and then when frozen put into bags or storage.

    To cook you can bake, grill or fry from frozen until hot through.

    I also always make excess mashed pots (butter and dill added) and use an icecream scoop to portion into the freezer as above - much better than smash!

    Pasta sauce with the tomatoes and peppers (add garlic and onion)
    Broth with the cabbage, celery, corn , barley sweet potato , and potato or minestrone with all these and add green beans and tinned tomatoes.
    Blanche any leftover veg and freeze.
