Veggie lunch ideas

I take a packed lunch to work and I'm in need of some healthy ideas - im in a cheese sandwich slump! I have access to a microwave also

Pasta or mixed bean salad. Chuck in peppers, carrots, whatever you fancy. Eggs if you want some protein, tuna if you eat fish. Make enough for a couple of days.
Frittata - chuck in whatever you want - tomatoes, spinach, spring onions, sweet potato. Cook in muffin cases. Freeze and defrost as needed.
Hummous - bought or homemade can be frozen. With carrot, celery, peppers, breadsticks, whatever you fancy to eat it with.
Wraps make a change from sandwiches.
Soup - again you can make a load and freeze it. I like tomato, or carrot and coriander which are quick to make. Add some lentils or pasta if you want to bulk it out.All shall be well, and all shall be well, and all manner of things shall be well.

I'd suggest making up some bulgar wheat / couscous / quinoa the night before at the same time as you make a cup of tea, and throwing in bits of salad, a protein (if not quinoa) and a dressing. So simple and satisfying, and that way you get something slightly different every day.
Nowt wrong with a cheese sandwich btw. It hits the spot that fancy grub can't.Value-for-money-for-me-puhleeze!

I had coronation chickpeas recently and they were lovely. I had them on a baked potato but you can also have them on a sandwich.
I used this recipe (obviously leaving out the chicken!):

Then I drained the chickpeas thoroughly, mashed them a little then added them to the coronation mixture, giving it all a good stir.
Another recipe I use meat-free is this one:

Instead of adding chicken, just use another can of refried beans (I make mine from scratch and I use two tins of pinto beans to make the right amount for this recipe). I buy frozen jacket potatoes (OK not very MSE but bear with me) ... if you take one out of the freezer in the morning and leave it in the fridge at work it takes less than five minutes to reheat. Can have it with beans, veg chilli etc. I eat fish so sometimes take ready mixed up tuna and sweetcorn in a tub.
Salad - chopped lettuce, cucumber, tomato, pepper and feta cheese is a favourite, or make a pasta salad and throw that in. I am also a fan of mixed bean salad.
Soup. Carrot and lentil or leek and potato are current favourites of mine - make up a batch on a Sunday afternoon.
Leftover chilli/lasagne/veg curry is far more interesting than a sandwich.
I like hummus but find a lot of ready made stuff is a bit garlicky for me so sometimes make my own and take oatcakes and carrot sticks.
What I would lso do is invest in a couple of really good tupperware boxes with clipped lids and something that will transport soup. It makes life a lot easier.0 -
I like wraps my favourite fillings are:
Avocado, tomato and mozzarella
Mushroom omelette
Hummus and falafel
Celery, Apple, edam, walnut
I sometimes take little tomatoes, pickled onions, pineapple, cheese cubes and vege hot dog sausages on sticks.
Dips, nuts, crudites oatcakes
Home made soup.
Cheese scones and grapes
I like mushroom pate on toast, easy to make with cream cheese. There's also recipes for a baked bean and cheese pate.

It's really easy to make and keeps well, so I usually make a couple of batches at once and then divvy up into tupperware. I have it with a bit of couscous, made with some stock, a bit of oil and lemon juice, and then with chopped up spinach wilted into it (again, i'd make a couple of batches).0 -

Usually I'd just buy a cheap bag of stir fry veg rather than doing the veg separately. It's the sauce that's important: honestly it's addictively delicious! It's a good one to have for dinner and then save for lunch later in the week.0
