    I was told that I don’t put the money I have paid tax on in the tax return form as they already have that on record. Tax return is to calculate how much tax you need to pay on your self employed earnings.

    That is 100% wrong and very worrying if that advice was given by any kind of authority figure. Hopefully it was just "pub talk" so you shouldn't rely on that kind of thing anyway.
